@asmcbain @jack TBH what you describe sounds more like a "condiment bar” in the sense of a whiskey/etc bar. Not just "the 5-10 sauces the restauranteur wanted to standardize on" but like. A WHOLE LOT OF 'EM.

Ideally, of course, aged slightly less than your average spirits…
