prior to 2001 California Olive Ranch made the best olive oil I have ever had. After the poor olive crop in 2001 they had to import a lot of olives and replaced their normal olive oil with an ‘international’ blend and repriced their old good olive oil like double what it had been. The international blend is ATROCIOUS and I switched to Kirkland for EVOO as a result.
In my day to day I notice it the most in cheap butter, it can smell rancid right after opening it.
With white flour I don’t notice it even when I have had the same pound bag of white flour going for roux for 6 months.
With nuts I can only notice it direct comparison; If you manage to get ahold of actual fresh ground peanuts and compare it to a freshly opened jar of Adam’s peanut butter you can smell that the adam’s is off a little by comparison.
brown rice blasted for 20 minutes at max pressure and then let to rest for 10 minutes is so tender and fluffy that it doesn’t even seem like brown rice it’s more like a grain almost like bulgur. Two people in my family that didn’t like the chewy brown rice cooked in a pot switched and prefer it to white when pressure cooked!
I use 10m+10m rest for white and 20+10 for brown and it’s perfect every time

oh stuff is definitely being done, like building new fossil fuel export hubs!.
