My muffins tried to escape their wrappers. I didn’t overfill them and my oven is perfectly level. Never had this before with this recipe. Any idea what might have happened? https://www.diningandcooking.com/816407/my-muffins-tried-to-escape-their-wrappers-i-didnt-overfill-them-and-my-oven-is-perfectly-level-never-had-this-before-with-this-recipe-any-idea-what-might-have-happened/

michaelmeckler,

@dnc It looks as though the tops baked and became solid while the interiors were still moist and rising, pushing the baked tops to the side in order for the expanding interiors to have a place to go.

So my first hunch would concern the moisture of the batter and the amount of leavening agent, with the thought that the batter should have less moisture and not as much leavening. Seeing the jar of peanut butter also makes me wonder about the batter, since peanut butter can be tricky.

@dnc was the convection fan on?

@dnc The only thing I can think of is air bubbles in the batter and then the oven fan being overly aggressive.

SinclairLewis,

@dnc OMG they became sentient and tried to escape the heat!
