So they really forced all the protesting subs open over on Reddit eh?

I know r/wow had decided to stay dark indefinitely, and yet it's open and all mentions of the protest appear to have been scrubbed from the sub completely...

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@Sar BOooooOOOOO! BOOOOOO! i still won't cross the digital picket line, even though i miss my WoW and other reddit subs very much. I'm hoping to find a WoW group on Lemmy.

@Sar yeah, i rarely posted, and only upvoted good things there, and skimmed past the daily garbage. in the past year i had been following r/WoWnoobs, and that was great. people were patient and helpful with everyone posting simple questions, and the discussions were fun. ah well, and now here we are. : \

I was shocked by this. I mean, I had no idea there was a band named Greta Van Fleet. When I read it too fast I thought it was "Greta Van Sustern" and I was thinking, "Yeah I could see her being a lesbian"

...In all seriousness, hats off for him doing this. Now more than ever it is important to be out, proud, and loud as these full frontal assaults on LGBT rights gains ever more traction throughout the country and we've lost ten years worth of progress for support of LGBT rights among the Republican Party rank and file.

PS I honestly never heard of this band before. Yes I'm that out of touch. Now get off my lawn you hyperactive young whippersnappers! :)

@hankg you should check them out. the sound is full-on '70s rock, a lá Zeppelin, but they also make it their own.

Hey y'all -- the Reno Buddhist Church (and Center) is building a new meditation hall! I'd appreciate it if you could help spread the word. They are really doing great things for the Reno community, and every penny will help. Thank you!

Old enough to remember when people laughed at the gumdrop Macs, and scoffed at the price of the original iPhone. Apple doesn’t lightly enter into things any more. I’m definitely waiting to see more of the Vision Pro.

@Dr_Bombay My copy of "The Rye Baker" by Stanley Ginsberg arrived last night. I started perusing the introduction section and browsing the deliciously fascinating recipes. Thanks for bringing it to my attention! I've been an amateur bread maker for a while now and have two starters going, one "regular" gifted to me by a neighbor over a decade ago and a "COVID Memorial" one I started during COVID to help friends who kept asking me for sourdough advice get started on one since I never made one from scratch. Looks like I'll have to get started on a third for rye now :). I had no idea that rye baking isn't just a low gluten bread production process but a very different chemical network structure than what we do with gluten-based breads. So many of these look promising. I can't wait to have time and room in my calorie budget to start experimenting with this later this year.

@hankg your history with bread baking almost mirrors my own! i’ve baked bread since college, and i have one starter that’s a decade old, but i had dried it and put it in storage sometime before the pandemic because i was exploring no-knead breads then. During the pandemic i started a batch up again (named Corona, of course), and then a whole wheat one i named Covid. Then i got that rye book and realized i needed a third (rye) one, and that one is named Moderna, haha

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@hankg yeah, finding all the right rye flours has been an ongoing thing for me, too. my local grocery has Bob's Red Mill dark rye -- in bulk! -- so that's been really helpful. for the rest, i have been buying online. Central Milling and Bob's Red Mill are my go-to sites. and sometimes if his recipe calls for "medium rye" i just use my dark rye and swap out a bit of it (20%) for white or wheat flour, and see how it goes.

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@hankg @hankg i have no idea, honestly. why not go for it and see what happens? that’s what i would do. seems like after several feedings it would be all rye, anyway.

i finally sliced into that Paderborn Rye i made a few days ago, and i remembered to take a beauty shot of the crumb. cc @hankg

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@hankg thanks! i wanted to be sure you caught it, in case the crumb was similar to the kind you're looking for in your remembered kind of rye.

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@Epiclemur Thank you! i'm very pleased with it, especially since it was my first attempt at this recipe.

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@gsteele @hankg oh, and the "Bread Spice" he mentions is 10g caraway seed, 6g anise seed, 6g fennel seed, 2g coriander seed, toasted and ground. you can save the unused part for other recipes in a tightly-lidded jar. it smells heavenly!

It’s time for another bread baking update from me: I’m still randomly working my way through Stanley Ginsberg’s “Rye Baker” book, and this time it’s a German “Paderborn Rye,” (p. 345) a mixed rye and wheat flour loaf perfumed with ground caraway, anise, fennel and coriander seeds. Goes well with strong cheeses & charcuterie. (Note: The top is docked with random shallow holes with a chopstick, that’s why it looks like that.)

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@hankg hmm, i'm not SUPER familiar with all kinds of rye bread yet, but it's a Polish bread? i could look in this book and give you the names for that region, and maybe with google that would help you narrow it down...

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@hankg here's two pages from the book: the first one shows an overview of the Polish Rye recipes in this section, and the second shows the only photo in that section, of a "Mountain Rye" that looks like the rectangular loaf i made yesterday. maybe these will help narrow it down?

@hankg it's a really great book -- highly recommended! as a hobbyist baker i find it very challenging, but rewarding. I adore rye, so i'm really enjoying it, but truth be told i've made a couple failures that ended up in bricks so hard i could use them as actual bricks, haha. one recipe that is my go-to now is the N.Y. Old School Deli Rye. i've made it many times with great success, and it's SO delicious.

well, THIS is some bullshit right here. i'm so done with Adobe. i have been learning to use Affinity's suite of software, so i'll be bailing on Adobe as soon as i'm comfortable.

@HistoPol @blabberlicious @donmelton thank you for the tip -- i'm definitely going to check it out. Affinity's software seems to be great for my other Adobe needs (IndDesign, Illustrator, and Photoshop), but i wasn't sure about an Acrobat replacement.

Star Wars Galaxy's Edge yesterday is giving me strong Burning Man 2007 vibes. The Battle of Geonosis at the foot of the Man (the same year he burned twice!) is one of my favorite memories of the burn. (Note: i didn't take either of these photos.)

Dr_Bombay,
@Dr_Bombay@mstdn.social avatar

@ratkins ohh, it was so fun! this camp was giving away lightsabers — they had a truck full of boxes and boxes of them — and they said there would be a big battle at the Man at sunset. it was so perfect. We all got to be kids again, and reenact epic duels. i still have my saber, lol
