I buy direct from a farmers family distributor that operates here. I buy 77lbs at a time from them (half bag). For more varietal beans, a local coffee shop has a wide variety and often does deals. Its nice to talk to people that have roasted what you're buying and give you tips. I've been allowed to participate in some of their cuppings which was an experience.

Washed Guatemala Huehuetenango is my top pick. I love South and Central American coffees. I tend toward flavors of sugars, candy-like, light fruits. Roasted light-medium. Drinking an El Salvador today that has a nice lingering sweetness.

Anaerobic Processed beans are so interesting to roast. They change so dynamically after FC. I found each roast to require its own adjustments to brew method to get a decent cup, and its fantastic when dialed in. Requires a high degree of precision or the spirit of experimentation, and a good quantity of beans to play with. Would not recommend just getting a couple lbs.
The beans I got were Columbian but my daily drivers are from the same region, Im convinced the difference was in the Anaerobic Process.

Interesting I just searched that process and it says that they are processed in a closed environment with no oxygen.
