Quite honestly why isn't it alteady standard, that a separate vegetarian and vegan card exist?
I'm not talking about a section in the menu but a completely separated printed menu only for vegetarians and vegans. The first thing which would become apparant is "oh no we need more offerings this is only salad and bread" but of course if you as a restaurant fail to see it the customer can also be like "oh no it's so short I will go again".

For online menus it's trivial but I mean about the physical

I'm not even vegan/vegetarian myself I just like to eat vegan/vegetarian.
If all your courses require meat then I pity your underdeveloped culinary taste.

Also, quick FAQ:
Q: this could be expensive
A: yeah it's true. Providing service requires providing service. Or in the absence of providing said service: yeah it sucks to suck. Nobody forces you to accommodate customers. You might be inclined to do so when your whole business is... accommodating customers.
