@ranx Ha – the Italian food police have rocked up 🤪 I prefer to think of “pesto” as a process, which can result in (the very lovely) pesto alla genovese (which only dates to the 1850s or so), but then there’s pesto alla siciliana, pesto alla calabrese, & in this case, pesto alla mccaughreana 🙇‍♂️ (Oh, and I toast my pine nuts too 😉)

@markmccaughrean I see you know a lot about pesto 👍 btw, my favourite is the calabrese 🌶🔥 I recently tried a new variant which I like a lot with tomatoes and balsamic vinegar 😋

@fe06 No need. The green leaves of wild garlic are used, not the small bulb, & this replaces both the basil & the garlic that are used in regular pesto 🙂

@sundogplanets It’s wild, from the woods just a little south of me. For a long time it has been protected in NL, despite growing very widely in many locations, so foraging was forbidden. I made a check last year though & believe that the law has been changed to allow it. But I’m struggling to find that information again this evening 😬👍
