Anything but white bread and processed cheese! My go-to is whole wheat bread and old cheddar. Also, it might be worth putting mayo on the outer faces of the sandwich to fry it; I've seen a lot of grilled cheese recipes that suggest this. I tried it a few times, and it's not really my thing, but maybe you'll like it more than I did.
