As little as I've had any points with that yet, I do enjoy cooking and can say that something like a [Thai] Curry or any Masala are options, espechally when paired with soft-boiled if not freshly made pasta instead of rice...
Another option may be soft & creamy potato mash [maybe the powder version to add boiling water, a dab of butter and milk to]], which you can customize the hell out of as well...
As for protein, consider soft boiled and scrambled eggs...
