If you put /instances after the URL, e.g. beehaw.org/instances, it will list all linked and blocked servers.

It’s a bit finicky, but when this kind of search hasn’t worked for me, I’ve had success searching without the ! or just pasting the community’s URL into the search.

I signed up on a smaller instance and only follow a couple of communities there, so I had to go out and search for things I was interested in. I pretty much just subscribed to anything that sounded remotely interesting, figuring I could leave later.

i mostly found stuff with browse.feddit.de and lemmyverse.net, as well as just going to the bigger instances and looking at the local lists for anything interesting. So I’m following communities across several of the larger severs - lemmy.world, lemmy.ml, beehaw.org, kbin.social, sh.itjust.works, lemmy.ca - and a few smaller ones that sounded interesting or relevant. Also fedidb.org is a nice tool to see info about the fediverse in general, including stats on Lemmy and Kbin servers.

“All” will be different on different instances - it’s basically all of the communities/magazines that anyone on that server follows. On large servers this’ll cover just about everything but not on smaller servers. Plus there is probably a lot less cross-subscription between Lemmy and Kbin than within each. The two may also have different algorithms for the hot/active lists.

The scrolling thing is a bug with Lemmy. It’s been resolved with version 18 but some instances, including lemmy.world, haven’t updated yet.

I haven't been able to join Kbin magazines by searching in the !magazine format, but when I just paste the URL from Kbin into the search I've been able to add them that way.
