Help finding a recipe from my childhood

There was this dish my mom used to make. Mom was the only one who knew how to make this and never wrote down the recipe, so when she passed away, it was lost. We called it potato bread, but it's not actually bread. I never made it myself, but this is what I remember from watching. It started with a simple dough. I think it might have been just flour and water. Divide the dough in half and roll it out. Line a casserole dish with one half of the dough. Peel, dice, and cook some potatoes. Drain and mash them. Add them in the dish, then add a layer of cheese. Then add the other half of the dough on top and pinch it shut so that the potatoes are completely enclosed. I think some melted butter was brushed on top. Then it went into the oven for some unknown length of time and temperature.

When I search Google for potato bread, all I can find are loaves of bread, which is not what this is. Anyone know this recipe?

Izzgo,

This sounds delicious. Have you not tried exactly what you described? Was the dough pie crust-ish? Because then you have a mashed potato pot pie. Or was the crust biscuit-y? I think you should try to recreate the dough first, then add the potatoes and cheese. I feel the potatoes will need some seasoning, that's all. Maybe some milk to make them lighter?

Halafax,

"might have been just flour and water", meaning prolly not going to rise from yeast or baking powder? The form is slightly off, but you can make a pretty awesome potato cheese welsh pasty / scottish bridie / english butter pie. That's gonna be a more crust-like than bready, obviously.

Sindralyn,

The second one seems the most similar.
