When I joined Fedi a couple of years ago, before the massive explosion of instances caused by the main birdsite migration, I think the first UK-specific instance that I encountered was toot.wales.
So I ended up following quite a lot of people from there, and still do. Plus of course Wales is a fantastic country that I'm fortunate to live close to, and we spend many happy summer weekends walking in Welsh hills, valleys and mountains.
