We did all the shopping but put off the feast in favor of snacks and amazing leftover fried rice and spending more time together on Christmas Day, so today I’m unhurriedly making Elizabeth David’s Cumberland sauce while the ham bakes and video games happen nearby. David’s books are such an ideal blend of erudition and lazy wit, she’s my favorite.

This year’s addition to Christmas dinner is “Jansson’s Temptation” potato casserole, mostly bc I cannot stop laughing at its name. And also bc we could get Grebbestads adorable anchovies/sprats—apparently distributed by Abba?—locally.

I used this recipe (w/GF breadcrumbs, etc) but sautéed the onions for 40 min first bc I am not a monster. https://cooking.nytimes.com/recipes/1024949-janssons-temptation-creamy-potato-casserole?unlocked_article_code=1.JU0.datq.niHV55-pFRi0&smid=share-url 🎁 🔗

(Don’t eat me, Scandinavians, I married in.)

acb,
@acb@mastodon.social avatar

@kissane Apparently it was named after a 19th-century opera singer whose favourite dish it was

@acb or, alternately, a preacher whose reject-worldly-joys sermons were undercut by his fatal delight in fishy potatoes

@kissane that can is beautiful

kissane,
@kissane@mas.to avatar

@NoraReed I saved them, too good to recycle. Might fuck around and hang the lids on next year’s tree.

Joke’s on me, this was ridiculously good, I’m going to make it every year.

@kissane
Now I'm going to have to make it with and without sauteeing..

kissane,
@kissane@mas.to avatar

@xdydx fwiw the Swedes in the recipe comments were pretty horrified by the idea of putting the onions in raw, I think that’s a Times innovation

mothninja,
@mothninja@mastodon.world avatar

@xdydx @kissane as a Swede with a lifetime of Janssons experience: ignore the NYT and definitely sautee the onions first!

kissane,
@kissane@mas.to avatar

@mothninja @xdydx seriously, who puts raw onions in the oven?? very weird

xdydx,
@xdydx@mastodon.social avatar

@kissane @mothninja
Well.. I do.

Under almost evey roast that I can!

kissane,
@kissane@mas.to avatar

@xdydx @mothninja structural onions are different!

eoauey,

@kissane

I was sent a collection of vintage tinned fish this year.

It is said they get better with age.

@eoauey nooooooo

@kissane oh i love this! Also Old Man's Salad. Mmm.

woven,

@kissane hello genius friend who’s supplying us with recipe goals. Did you sub the cream?

kissane,
@kissane@mas.to avatar

@woven Yes! Swapped 1:1 with Thai Kitchen organic full-fat coconut milk (but used real butter bc it doesn't have enough of the protein I'm allergic to to matter). The little anjovis were so cute and good.

woven,

@kissane amazing! I’ve always filed recipes like this under “cannot make work”…🎉 (will do butter sub here and that’ll be fine) Now to find tiny little feeeshies for next year!

kissane,
@kissane@mas.to avatar

@woven I think something like Miyoko’s cultured vegan butter would work really well!

@kissane Her book on bread making is a sheer pleasure to read.

kissane,
@kissane@mas.to avatar

@iskandarv tbh I’d read that even though I can’t eat bread, she’s such a joy

@kissane In ~2019 we moved our Christmas dinner to the day after, so now it's a St. Stephen's Day feast (prime rib roast, roast veggies, Yorkshire puddings, with sticky toffee pudding for dessert). Christmas has enough going on without having to spend hours cooking dinner.

kissane,
@kissane@mas.to avatar

@waldoj I think this is so wise. We did the Christmas Eve oyster stew last night and a four-day celebratory feels about right.

waldoj,
@waldoj@mastodon.social avatar

@kissane Good point about the four-day celebration—by delaying the dinner, it expands the festivities from ~1 day to as long as you spread it out.

kissane,
@kissane@mas.to avatar

@waldoj I think I might do a pie tomorrow and a tart Friday and just roll it all the way into the weekend. (With extra salads, to forestall death by ham.)
