@M0CUV Even if you just use red lentils, it’s a lovely dish. We normally swap some of the herbs out for a jar of curry paste as a short cut and to add even more spice and flavour. This one works really well https://karimix.com/products/km0024

@g7vkq might cave and start using ready made pastes; been trying to follow recipes authentically but it’s a bit tedious. Occasionally I slip with the chilli; hilarity ensues :) I’ve had a few reactions like “****!! I CAN’T BREATHE!!”

@M0CUV Lol! We can absolutely understand where you are coming from. That paste is from a Kentish company; we tried their pastes at Macknades farm shop in Faversham (worth a visit if you’ve never been before). Quite impressed with the pastes…and we really like the vindaloo one (which is spicy, but not as hot as we expected). They are a life saver when you just want to rustle up food without the hassle in the week.
