Question:

I've started enjoying fish sopes from El Roy's taco truck in Santa Rosa. Delicious. They come with the queso fresco on top. Is all of that cheese sold commercially pasteurized? I'm newer to this, my Mexican food experience prior was mostly burritos and grilled plate stuff.

@rolandelli There have been a number of recalls of soft fresh queso type cheeses over the last few years for listeria. The last one 2 months ago did use pasteurized milk. I would guess most packaged ones are pasteurized.

@rolandelli It can be made pretty easily. The restaurant could very well be making their own. You could ask them. :)

@rolandelli YW. Queso Fresco is almost the same as paneer, a fresh cheese from India. Usually milk and lemon. Queso uses vinegar instead of lemon. Traditionally both were made from raw milk that was heated. But here we use store bought pasteurized milk to make paneer so it stands to reason if the restaurant made it, it would be same.
