Pleroma seems to be a more light weight version of Mastodon.
I don't know anything about Akkoma.
I'm replying from my Misskey instance where you get reactions to posts, not just favorite. Misskey is a bit more fun to use, the interface seems a bit more modern.
Calckey is a fork of Misskey and I don't know differences it has vs Misskey.
Never heard of Honk.

You didn't mention Friendica or Hubzilla, but I'll say that Hubzilla can do social media, forums, webpages, has multiple plugins, privacy groups (which is the biggest thing activitypub in general is missing). Friendica is a good in-between of Hubzilla and Mastodon giving a more Facebook-like experience.
I run a Hubzilla and Misskey instance for myself and a friend. I run Pixelfed, Friendica, Peertube and soon Funkwhale for myself.

@RL_Dane Oh! I almost forgot about Hubzilla's ability to clone your account on the event your server goes down. Also it has nomadic identity, so you create a channel and move around all your want.

@RL_Dane Yeah, Hubzilla solves some of the problems we see in most other mainstream apps.
Like, what if my instance shuts down for good? Answer is nomadic identity.
What is my instance is broken for a few days or weeks? Answer is Clone your channel with another server, then use it while your main instance is down.
What if I want to post a photo of my family but only want certain people to see it, while these other people are on different servers without creating a room? Answer is Use privacy groups to limit visibility to those you specify.
Hubzilla also accepts RSS feeds and makes them appear as a real connection.
Hubzilla is the bomb. It's the Swiss Army Knife of the Fediverse.
