I recently set up my self-hosted system and went down this path:
Ubuntu Server - decided against it because terminal only is tedious sometimes
Ubuntu Desktop - easy, popular (so more documentation), comes ready with Docker
Decided to use Yacht for my container manager and have been happy with it so far, super simple compared to other options out there but you still have the control you need
I definitely want to add to this list. I want to get some stuff behind a VPN and sail the open seas to fill out my plex server, I just want to make sure I am being as safe as possible.
I see you have a container for a Space Engineers server, would you mind telling me what you are using? I would love to have a container for it instead of running torch on the desktop.
I’m a massive sci fi fan and played the ever loving shit out of Star Citizen for a while there. Loved the 6 degrees of freedom and the capability to be a person or a starship....
If you like sandbox building, Space Engineers. There are so many good mods to give the game some life and nothing is more satisfying than building your own ship from materials you mined.
That is the biggest thing imo, it needs a better single/multi player experience that drives you to expand and gives you some kind of story. Imagine having to start out one of the planets with that Scavenger mod only to be able to tech up and go farther. It is a game that is begging for a reason to play other than imagination.

I nuked my Reddit accounts today. Deleted all comments and posts, then the accounts themselves. The tool I used showed each comment as it was deleted, and it was bittersweet....
You might want to check out the book Feed by M.T. Anderson. Dystopian syfi where if the algorithm can't sell to you then you are in a tough spot. Your comment made me think of one of the main characters and how messed up that book is.
