I know there have been many time answered « pixel » but I think it’s the wrong choice for you : you said you don’t care about camera, and what is bothering you is the slow processor and reboot on your Motorola. Pixel have excellent camera and very average processor that overheat. Exynos something.
If you don’t mind the Chinese rom (which are considered inferior to stock android) I would go Chinese , they offer the best bang for the buck. Like a xiaomi 12 or 13.
If you want a good u.i maybe htc u23 pro.
I paid my iPhone 13 mini around 600e if you don’t mind iOS.
