I've always guessed this was the case for everyone. My own two rules of thumb for cooking from recipes are:

  1. I assume the times given to make it are for professionals who probably have a sous chef; and

  2. I'm cooking because i enjoy it. i don't want to be stressed about it, so i just plan on it taking much longer. It's fine by me as long as the result is tasty.
