The place I go when I need my prime rib fix. This isn’t even the biggest cut they sell. Yes, I had a lot of leftovers. https://www.diningandcooking.com/1098218/the-place-i-go-when-i-need-my-prime-rib-fix-this-isnt-even-the-biggest-cut-they-sell-yes-i-had-a-lot-of-leftovers/

Gotta cut carbs so I think I'm gonna get back into and such

Recommended Steak seasonings? I've got lots of spices, but nothing specifically for steak I realized. I have some seasoning salt but it's really more for pork. Ordered some Monterey steak seasoning to start. I still have like 10 spice jars to fill up

samstokes,

Cooked my first reverse-seared tonight. Couldn't recommend the technique highly enough. Incredibly tender, easy to hit the target temperature, great flavour. Compared to sous vide, quicker, better sear, less fuss with vacuum sealing.

@samstokes hmmm… sous vide followed by searing in a greased cast iron pan works well… the grease gets rid of the moisture in half a second (a fire hazard on a gas stove, but stellar on induction)

samstokes,

@dpp sous vide is great too. I'm on gas so the moisture issue is real - sous vide still sears, but I found the reverse sear got a better sear & faster.

I’ve never eaten steak with chimichurri before and decided to give it a try. It was not good. Is it because of this brand? Should I be making it fresh? https://www.diningandcooking.com/921688/ive-never-eaten-steak-with-chimichurri-before-and-decided-to-give-it-a-try-it-was-not-good-is-it-because-of-this-brand-should-i-be-making-it-fresh/

Medium to Medium-well...

Also why are they cut up into tiny chunks?

Do you want to use them als salad-, pasta- or sushi toppings??

Threw down a feast for 10 at a family reunion. Two porterhouses and a ribeye, prime. 3+lbs each. https://www.diningandcooking.com/886528/threw-down-a-feast-for-10-at-a-family-reunion-two-porterhouses-and-a-ribeye-prime-3lbs-each/

I like the reverse sear method. Lower heat to start and flip often. It prevents heat from building up on one side and keeps the heat on the exterior. Flipping it often lets the heat penetrate into the interior of the steak. Once the temp reaches about 10⁰ cooler than what you want, put it on high heat.

Does venison count over here? Reverse seared in duck fat, butter and thyme and finished with truffle butter. On a freshly re-seasoned teak cutting board. https://www.diningandcooking.com/814001/does-venison-count-over-here-reverse-seared-in-duck-fat-butter-and-thyme-and-finished-with-truffle-butter-on-a-freshly-re-seasoned-teak-cutting-board/
