samstokes, Cooked my first reverse-seared #steak tonight. Couldn't recommend the technique highly enough. Incredibly tender, easy to hit the target temperature, great flavour. Compared to sous vide, quicker, better sear, less fuss with vacuum sealing.

dpp, @samstokes hmmm… sous vide followed by searing in a greased cast iron pan works well… the grease gets rid of the moisture in half a second (a fire hazard on a gas stove, but stellar on induction)
samstokes, @dpp sous vide is great too. I'm on gas so the moisture issue is real - sous vide still sears, but I found the reverse sear got a better sear & faster.

farksnatcher, I like the reverse sear method. Lower heat to start and flip often. It prevents heat from building up on one side and keeps the heat on the exterior. Flipping it often lets the heat penetrate into the interior of the steak. Once the temp reaches about 10⁰ cooler than what you want, put it on high heat.
