I know about PixelFed, but I'm not interested in photo sharing social media style. I just want something that works like Imgur when you upload your images as private. Maybe PixelFed has that option?

Sorry for necrobumping this thread and you may have already found a solution, but you might try Picsur. It’s an open-source, self-hosted Imgur clone. The self-hosted aspect might not be exactly what you’re looking for, but I did set it up in docker and it worked well and was a simple process.
The development seems to have slowed down a bit, but it does seem feature complete.
How about Lensdump. Doesn't have a gallery, you just share the URL, but the nice thing is there's an auto-delete feature. Guess that would more handy if you were sharing pictures to friends/family, and not so much a forum/board, but still a nice feature to have.
The best imgur alternative I found is imgchest. Not federated, but has a similar layout. Moved over to it after their announcement of purging old posts
I'm aware of PixelFed, but since it's more like Instagram, I'm not interested in it. I think I'll stick to Imgur for the time being as @coupland suggested. Thanks for the answer though!
Hey, I understand your enthusiam about the Fediverse and most of us are new here, myself included. Maybe someone else will point out an error in my logic. I'm not the authority on many things at all, just weighing in with my 2 cents.
Imgur announced automated image blocking, no NSFW private images, plus purging of non-account images. None of it affected me, but it breaks stuff on the internet.
