I heard this on a "trip doon the watter" on the paddle steamer Waverley in 1997.
All about the left handed ones and the right handed ones.
Or is it clockwise and anticlockwise?

I understand it depends on the phase of the moon that dominates the hill the beasties graze on. Traditional means of capture involve setting nets at the bottom and then creeping up on the poor beesties, giving them a shock so they panic, attempt to run in the other direction and tumble into the nets. Much whisky needs to be consumed before the hunt.
