(I used a spam SMS in the video) Select a word (I double-clicked) ⌘C to copy ⌘+Tab into another app, then back again. Begin typing. Voila, the Message bubble is editable! Since Big Sur, Messages.app is a #Catalyst application, isn't it? -- If you happen to have one that you have control over, could you test whether that's maybe an issue with yours, too? EDIT: Could be a fluke, only on my machine
