This is a good biryani list for Singapore.

Most people from Singapore will just be familiar with the Malay / Yemeni biriani, or Indian-Muslim Malay / mamak style, but this list shows the vast array of regional Indian, Bangladeshi and Pakistani biryanis that we now have in Singapore

My fave is the Junior Kuppana and Malabar ones on this list. I have a preference for short grain and spicier biryanis, especially southern biryanis

I cooked Thalassery Biryani (Malabar) for lunch today, and it turned out exceptionally well. The specialty of this biriyani is that it is made with a special type of rice called Khyma or Jeerakasala rice (short-grained Indian aromatic rice) instead of Basmati. My favorite biriyani styles would be Malabari, Hyderabadi, and Kabuli Palaw, all of which taste delicious.

To basmati supremacists:
Ah! It is high time to taste these styles: Kerala (Kochi, Malabar, etc.), Kolkata, Dindigul, Ambur, etc... ;)

@reshmi I love all of these. For basmati I like it but if it’s like Awadhi style. Hyderabad style seems to be the platonic ideal but I only like it at very specific spots

@skinnylatte @reshmi I grew up in Awadh (Lucknow) and this warms my heart

@reshmi very nice. I like a good basmati myself but I can’t stand basmati supremacists. ‘Only basmati can make biryani’ ugh

I tried to make a count of all the styles of biryanis I’ve had. I think I am at 30, which I’m proud of, but I’m also a biryani obsessive and I want to try all 500 (I think that’s the number but I’m guessing)

I once brought a friend to India and she doesn’t like rice as much as me, and at some point she was like is there anything else to eat in this country other than biryani?!?

I think I can have (great) biryani at every meal
