@ai6yr are you going to put those in smaller carboys for the second ferment, or use CO2 or add marbles? Just wondering out loud. That head space makes me nervous ngl

@mrpieceofwork I haven't yet crossed that bridge... also, I don't have any other carboys. So, I need to get them out and back into something, without headspace.

@ai6yr as long as it's actively fermenting and putting off a lot of CO2, you're OK. You want to handle the "elixir" as little as possible, to avoid oxidizing it, or worse. (they both look way too good for anything to happen to them!)

@mrpieceofwork I'm contemplating buying marbles for the next step, because I can't see how to put multiple 1 gallon bottles with stoppers in that same fridge. My thought would be to rack these into intermediate containers, clean out the original container, and pour them back into the original, and offset with marbles (to be purchased).

Wow, that's the brightest yellow I've seen for honey.

I'll be starting a blackberry batch and a black currant batch within a few weeks.

@danohibernian It's unripe honey removed from an outside cabinet (beekeeper here), and it was absolutely PACKED with pollen. That won't keep as honey, but it will be interesting to see how it turns out as a mead.

@garthc I bumped it to 65F, the yeast lives between 59F and 85F, cutting it too close.

Hmm, the meter is showing it is dropping down to 58-59F, might bump up the setpoint a bit as the apparently like its ABOVE 59F. Will put it up at 65F.
