Interesting, the alcohol content in the hard cider served at La Crêperie de Paris at Epcot is only 3%. Going to brew up a batch of some kind of hard cider here today, probably, and all the recipes seem to be double that.

Hmm, recipes all seem to essentially be:

sterilize everything
pasteurize apple juice, if necessary
add sugar/honey/sweetener depending on preference/amount of alcohol desired
ferment (primary only, or primary/secondary) at some temperature that is not hot
bottle
pasteurize to prevent a gory death by shattering bottle

Hijacking this news story to sing the praises of Thatcher’s Zero Cider. If you are giving up cider to avoid the alcohol, the I can heartily recommend Thatcher’s Zero Cider. It’s delicious.

Also, Bulmers Cider has always been meh! to me. As has Magners. Aspall’s is nice. As is, of course, Strongbow 🥳

Dropped the car in for its MOT so that gives us just enough time to wander over to the brewery for a cheeky half each and then some take-out before picking it back up. A Dolly's Special Brew for me; a lovely craft ale with a lot of biscuit flavours in it and one of only a few this brewery ever does fined. My wife's gone for the Fruit Bat cider which is definitely fruity, but thankfully less batty than we were fearing.

@Lazarou @JackTheCat I remember being told by a cider maker that hanging some meat in the vat improved the taste - so the odd rat falling in was fine as long as the filters worked 😳

And there is a decen West Country cider called Black Rat - coincidence?

I hope everyone had a very safe and merry yesterday! I started the day out with a Cinnamon Roll from , a spiced cider that the company sent me. Paired with an actual cinnamon roll, I found it semi sweet and subtly spicy and a great way to start the holiday. Cheers!
