In further experiments with vital wheat gluten, I made regular bread for the spouse yesterday. Added a cup gluten to 1kg wholemeal flour, 2 cups of rolled oats, and a cup of skim milk powder, and made it using yeast.

It made two of the most perfect loaves I’ve ever attempted. Gorgeous texture, flavour, and colour, and all the extra protein will be good for him too!
