I have attempted lavender scones today. Mine don't look anything like the recipe ones, so I'm not sure what's happened. But these look better, so hopefully they taste great.

Compare to the recipe's photo https://www.thecuriousfrugal.com/lavender-scones/ I wonder why mine look so different. Mine are much fluffier.

I swapped vegan butter for coconut oil, but that typically doesn't make much difference except for taste and I doubled the recipe because one cup of flour is not going to be enough for the boys. So I'm really curious as to what the difference is.

Even the next day the scones are spectacular! Having one right now with lavender coffee ;) one other small difference is that I used soy milk instead of almond milk. I like soy milk in baked goods better because it has more fat and the protein is a bonus. The protein may help in its own way too, I think it's more similar to dairy milk than almond milk is.
