Because I don’t ever cook this dish (not a big fan), at Christmas my husband got two big bags of home cooked kale stew (Grünkohl) with meat and special sausages (Bregenwurst) already in them. We froze them and yesterday was finally the time to serve this up (photo 1).
I made potatoes for all of us but used my son‘s and my share to fry them with pepper and leek pieces to which I added a burger patty and leftover sauce from the cottage pie we had on the weekend (photo 2).
Despite not being a kale fan I had to admit this stew was pretty good and the meat on the bone was also tasty. I drew the line at eating any of the sausages as I usually find them way too salty. Still a great Christmas present, don’t you think?
We had pilau rice and Chinese street food style tofu slices. Those slices were so easy, yet so good. You fry them in some oil on one side until browned. Then turn them over and sprinkle them with ground cumin, chilli powder, five spice powder, and salt. Don’t skimp! Fry them another 2 minutes and add chopped spring onions and coriander during that time.
Over the weekend my husband made us a huge cottage pie. I would have preferred the shepherds version with lamb, because it usually tastes better, but didn’t fancy the trip into town. However this one with a mix of pork and beef was wonderful, especially on the second day it tasted great. My son and I are already looking forward to eat the leftovers on one of the coming days. 😋😋😋
Over the last days we had lots of Mediterranean style food. My husband prepared us Greek style dishes (homemade gigantes plaki, store bought pita bread and Greek delicacies like feta cheese, olives, stuffed vine leaves and cabbage salad) to which he added souvlaki and long grain rice on Sunday.
On Monday I made a Greek farmers salad with potato wedges that allowed us to finish off most of the small leftovers.
Today I prepared an Italian style pasta salad with red pesto and various finely cut vegetables that I paired with mozzarella cheese and not so Mediterranean Bratwurst.
