For all y’all #hunters including #waterfowlers into #goosehunting , I have seen an uptick in folks making goose jerky. Unless you’re cooking it, just don’t. Geese carry many pathogens, many of which are not killed by salt curing or drying. If you cook the meat during drying (for example, making jerky in an oven at 250F), it may be safe, but salt curing by home methods does not kill toxoplasmosis, and is unreliable for many other diseases.
