One of my ChiaChow Chat posts, this one from yesterday. (I am updating through the weekend, which I will also share here so you don't have to leave the fabulous fediverse 👍 )

"Feb 1, 2024 - Today and tomorrow I'm eating out. Been doing a lot of carnivore lately - most days, in fact - so going to see how a couple of days off go, how my body handles it mainly. I'm a huge proponent of listening to my body's signals, and about once a week I get cravings for things like cabbage or mushrooms or squash. And I'm there. So this weekend I'll be doing OMaD and moderate carb and see how it goes. Frankly, I've been losing weight so fast it is almost making me nervous. I never wanted to lose like this...for a few days I'm putting on the brakes and catching my breath but still taking it day by day. I will keep you posted."

Oh yes! My first meal today is quite a pleasant surprise!

Ya know those 90-second microwave "breads" that have been around forever? I wanted toast, so I was going to make one. But I just didn't want the almond flour, so I subbed it with a 1:1:1 mix of green-can-parm, pork panko, and whey protein instead, to carnivore it up. SUPERB!

But wait! There's more! I "toasted" (fried) it in some leftover burger fat from last night...and then melted butter over it. WOW! I can't wait to try it in duck fat. Or bacon fat.

Breakfast this morning was in celebration of my awesome results for my calcium score I used Andouille Louisiana sausage, mushrooms and garlic with 2 hardboiled eggs. It was absolutely divine. - oh yeah and I used duck fat in this for the first time ever!!!! Loved the duck fat 🦆 - thank you @KetoPlus for recommending the duck fat!

We went on a vacation last week to visit a friend in another state, and I did fine with the first few days being animal based, then when temptation was getting to me I switched to low carb (a moderate form of 50g total per day). Getting home it has been great to be back to my preferred WOE, just the same.

IDK who follows my "What I Eat" page, but I am not currently updating it. I got (yet another!) domain just for the purpose of all of my lowcarb/keto/ketovore/hypercarnivore/carnivore posts as well as the new "What I Eat" page; though there will be links, I will be moving all of the food-related info and posts from my chia.owly.net page. I am hoping to have that finished by the end of the month; I don't have the same concentration levels and brain power that I did the last time I put up a new site! But it's coming along...

In the meantime it occurred to me that I COULD be sharing those things here (duh!). So I will be "using" this group for that purpose during the interim. You have been warned 😉

Lunch taste sensation! Had some leftover burger patties with Boursin garlic and herb cheese to eat, and some mushrooms that needed to be used...so I sliced the 'shrooms and roasted them with seasonings and butter in my air fryer. Once I mixed them up with the burgers and melted cheese it made a delicious buttery cheese sauce...who knew???

I saw the mention of fries today which made me think about the time I made Jicama fries! - Jicama is a root plant and very friendly! I highly recommend if your craving fries make it! Be sure to skin it though. Here is a recipe I found online. https://www.asweetpeachef.com/jicama-fries/ - I actually think I will make some and deep fry in beef tallow and give that a go! @KetoPlus

Today I roasted a big chicken...I usually roast some hunk o' meat that I then eat on for a few days every week. This time I have different plans though! I will be eating much of it but plan to use the breasts (not a lover of white meat) to make chicken flour. Seems easy enough on videos...anybody here ever make it? I also want to make my own butter mayo. I am absolutely CRAVING animal-based foods lately! The term "carnivore" usual means meat-based in common usage it seems, but I'm eating dairy as well...anyway, I was headed in that direction, just seems it is happening faster than I'd planned! Still working out the details but for the last few days I'm eating what I crave - and it's all animal-based. Wow.

Sunday is pizza day in our house...a tradition started when we would pick up a pizza on the way home from church so that we'd have a day off from cooking and cleaning up after eating. As this week has been filled with collywobbles (set off, I believe, from the high-fiber salad I made on Wednesday), I've been leaning more animal-based. And today I am planning a white pizza with a chicken crust.

I have always loved white lasagna (clean deli chicken slices make great "noodle"s!) but this will be my first time making a white pizza. Unfortunately I have a partial jar of prepared alfredo sauce to use up; I'd rather make my own but so be it. Waste not want not.

And while I'm at it, I'm going to try my hand at making my own chicken flour out of the roasted leftover chicken breast I stuck in the freezer. Not a fan of white meat but if this works, I will have a nice use for it in the future!

I will report back later, you can be sure! Pictures 'n' everything!

One of the things on my to-do list is to post a personal and today is the day that I will cross that off!

A strong conservative politically, I choose to focus instead on the eternal rather than the temporal in my relationships, online and off, and on loving those that God puts in my path, meeting them where THEY are. Love to cook, and eat to minimize the effects of my disabilities as much as I can since 2004. For me that's been and/or and/or and/or almost exclusively. Been using social media since my and local days in the 80s, and my interest remains strong to these times because meeting interesting people is such a delight and joy!
