Some years ago, I remember reading posts (can’t remember where I saw them) from a guy who lived out if his car in Sydney.
He was doing it by choice to save money to get an apartment. He had a job, but didn’t want to waste money on rent. He covered a lot of tips and tricks, and answered heaps of questions. Eg a little heater for cold night, membership for 24hr gym so you could shower/ exercise, best places to park etc…
What struck me the most, was I started out thinking the guy was crazy, but ended up admiring him and thinking maybe he was the only sane one. I often think about this when I see homeless stories, and wonder what I would do if I lost my home.
This is just a side story though, and this guy (and I) had many advantages that other homeless people don’t.
Being homeless is no joke, and we shouldn’t have a society where people don’t have basic shelter.
This also brings another phrase to mind. It’s usually an American term, but I fear that we are inevitably heading to our own ‘trailer park trash’. And by this I don’t mean the trash is the people.
The ‘trash’ -no,tragedy- is that the housing situation is so fubar that we’ll end up using caravans and temporary accommodation as stoogaps for shortages. And,.once it’s established as a substitute for housing, it will never be replaced. Because it’s cheaper.
Luckily, in the article, the caption underneath the pictures told me which one was actually a photo of Gina, otherwise I wouldn’t have been able to tell…

Now McBride looks like the hero being victimised for exposing the war crimes.

Yellow crested cockatoos, galahs etc can be terrorists to trees and shrubs. You can be walking along and on the ground see piles of leaves and little branches and fruit with one bite out of them.
The cockies have very sharp beaks and will just chomp through anything. This includes aerials, cables or anything else they think looks like fun. Sometimes they will even party in your room

I do something very similar for a simple pizza in a pan,.rather than firing up an oven. I’m oven averse 😬
Again, you can use anything on top. Leftovers etc.
Wipe non-stick pan with oil. Medium heat. Put lebanese bread face down for a short time till it’s at least warm or slightly toasted. Flip so it’s face up. Aldi Lebanese bread fits nicely in a 30cm pan. Sauce, cheese, then whatever toppings you like. Cover with lid, and wait until the bottom has got nice and crisp. The cheese should have melted and the top ingredients heated up by then. If you really wanted the top to get a bit of a crisp on it, you could throw it under the griller for a while, but I can’t wait that long, and if you do, you probably should have done it in the oven anyway.
My favourite topping for pizza, quesadillas, nachos^1^ or anything crispy:
sweat down onions cut into rings and different coloured capsicums cut into strips until they become nice and soft. They also become beautifully sweet.
Slice up chicken into bite size pieces, or dismantle a breast from a bachelor’s handbag into bite size pieces. Grab some mexican seasoning sachet, Fajita is my preferred, and coat the chicken lightly in that. Toss it around in a bowl to coat evenly. Chuck the chicken in the pan and cook/warm it.
Cheese & Sauce. You can use whatever cheese you like. I’ve been using Aldi’s Vintage Cheddar lately. Also, you don’t need to grate it. Just slice it reasonably thin and cover the area. BBQ sauce is the go. I use Bullseye Original, and loooooove it.
Put it on something crispy and enjoy 😋
^1^ If doing nachos, leaving out bbq sauce, but adding sour cream, guac, diced tomatoes/salsa and lettuce is acceptable
As an aside, I was surprised to find this ‘oil’ was totally solid. It had the same consistency as a bar of copha, and I couldn’t even put a spoon into it. I had to nuke it in the microwave to get any out.
I used this recipe and used about 1 row and 2 squares from the next row of chocolate (so a little less than a 1/4 of the chocolate) and 2 tsp (10g) of coconut oil. This made enough for 2 serves for me, but I don’t drown my ice cream. So, one 200g chocolate would make about 8 serves. And one 300g jar of coconut oil would make about 60 serves.
Now for the important part; how did it look, how was the consistency and taste?
Once it was melted, I used a spoon to drizzle it over my ice cream. It flowed nicely, and after a short while, created a nice shell. I may have added a bit more of this than the usual Ice Magic, so in some spots, it did seem a bit thicker. But a couple of cracks with a spoon and no problem. It looked lush, and the consistency was good.
Now on to the taste. I’m a simple man. I put this over vanilla ice cream. I want to taste vanilla and chocolate. But in some cases there was a definitive taste of coconut. Now, the ratio of chocolate topping to ice cream varies by spoonful to spoonful. There were some spoonfuls I was thinking, “OMG this is soooooo much better. The choccy is delicious, and a very subtle hint of coconut with the vanilla”, and other spoonfuls I was thinking “WTF, I get chocolate, but the coconut is obliterating any vanilla in the ice cream! No!”
So, I might experiment with the next batch by cutting back a little on the coconut oil, and see how that goes. The other option is to embrace the coconuty in something different. I’m thinking a white choccy with a coconut might be interesting to try. Seeing as I have about 7 bars of chocolate to buy to get rid of this jar of coconut oil, I can experiment 😁
