Quesadillas are very good. I'm fairly sure I'm making them wrong, but what I do is put in taco seasoned ground beef, two slices of American cheese, and on the other side, a thin layer of tomato paste. In the skillet on low heat with a lid on until the cheese melts. Fold over the tomato side, squeeze flat, flip over, heat some more, done.
