MsHearthWitch, 15 days ago @samantha I love making shokupan! What cookbook are you using? I like using the recipe from Just One Cookbook. She hosted a zoom class a few years ago with a pastry chef in Japan who taught us (me and a couple from the Bay) how to bake it. Now I make it regularly.
