I know I want to record music and publish it, but I find the whole publishing part a bit confusing.

Should I put out a single first? If I put up a single on streaming and then want to add that as a part of an EP, is that easy to do?

Unless you plan to make a living at it, I recommend doing whatever brings you joy.
That being said, a single is a great idea if it's your first publish. You can self-publish on services like BandCamp (BC) or systems like FairCamp. The latter will require you (or someone you know/hire) to set up a server. I've been using BC for decades and continue to do so in spite of some turmoil there over the past few years. Adding to a release is easy on BC. (Difficult elsewhere.)
