What are heritage grains?
"Heritage grains" are traditional varieties of grains.
They were grown and passed down before scientists started heavily changing them in what's called the "GREEN REVOLUTION" from the early 20th century to the late 1980s.
These grains are sometimes called "ancient grains" or „Urkorn (in German),“ but that's not entirely accurate. They're not ancient, but they haven't ….

Eine andere Möglichkeit wäre Getreide das Du verbäckst zu 100% selbstanzubauen.
Oder etwas realistischer in ein EU Land ohne Meisterzwang zu gehen (zB Irland) und dort ne Bäckerei eröffnen. Nach ein paar Jahren könntest Du dann auch in DE legal Brot verkaufen

    @dnc what kind of flour do you use? How long did you knead? Any autolysis before;and how long?
    I just guess now that enzyme activity was too strong
