My wildest example of forced data mining in 2023 was a Sony camera lens I bought.
I could get a discount, only if I accepted their registration of data about me. And anyone who refused would have to pay a whopping EUR 375 extra for the same product.
My country has a law which requires business to treat customers equally. I really wish that law applied to anyone who wants to protect their own privacy.

Better yet, use a single-use email address, then request your entire record as per data subject rights, and after that, request the data to be deleted. Maximal cost for the other party.

Single-use email addresses are a great idea for a number of reasons: verifying GDPR compliance, protecting against online targeting on e.g. social media (custom audiences) and companies selling your personal data to data brokers, as well as determining the source of the almost inevitable data breach (plus protecting yourself against data breaches by cancelling the email address). List is not exhaustive :)
Am still searching for an ios app or firefox plugin that generates random trash data, concealing my real data in white noise - and contaminating data broker's illegitimately gathered information.
