I made a #FediverseGalaxies repo that generates a Jekyll site and a JSON file here https://cosocial-canada.github.io/FediverseGalaxies/ I have not yet built out the schema, but you can look what's there and get an idea that we can gather whatever info we like. When I've done this before, I usually accept submissions both via customized Github issues, as well as with PRs.
