I’ve tried tempering the egg/cheese mixture with the pasta water and not - and didn’t see much of a difference between the two approaches so I see no problem with doing that.

Your wok idea is interesting. I’d worry it would cool too quickly, but I have a proper wok (bought from the ever entertaining Wing Yip. I might give the wok a go!

Give it a go! The only hard part is when you add the egg/cheese mixture to the pasta and you can try evasive_chimpanzee’s tempering approach to make it less likely to go wrong.

This cooking method totally sacrifices the glorious crispiness of a ‘proper’ roastie, but because they cook in the stock and juices from the chicken you get a sort of fondant style depth of flavour. Not better, as such, but nice for a change when you don’t fancy a trad. roast.

You could, but you won’t ever get normal roastie levels of potato. They end up soft and mellow with a rich flavour from the stock. Trying to crisp them would, I think, be counterproductive. Still, try it and let us know!

Fair point. I chop a lot of green onion / coriander / red chilli. I usually take a photo of my wife’s bowl because my approach to plating my own bowl is more akin to fly-tipping than it is to gastronomic art. This is a photo of my bowl.

No worries! I like green onions a lot! Plus most of my family are spice-fearing so I have to add a lot of heat in some other way. A lot of fresh chillies (or in this photo a healthy dollop of Lao Gan Ma Crispy Chilli in Oil) or a chug of hot sauce (my goto for this kind of dish is Mahi’s Bhut Jolokia).

Monday: tandoori salmon with lemon basmati rice and a kachumber salad

Tuesday: leftovers from the Greek-style roast chicken I did on Sunday

Wednesday: chicken ramen with edamame and bok choi

Thursday: tagliatelle carbonara

Friday: West African beef stew with jollof rice and spinach

I’ll do the ones I cook from memory as separate posts for ease of searching the community in the future!

That said, the tandoori grilled salmon was almost exactly this recipe, and the Kachumber salad, likewise.

And I’ve never done the West African beef stew before but will probably follow something like this recipe.

‘Fish o chip’ intrigues me. Is that bought from a chippy fish and chips, or cook at home? What fish? Chips from scratch or oven chips (which have never, ever, 100% satisfied me)?

My opinion is that their union seems to be one of the very few left with any teeth at all.

More industries should have unions which can wield the power they do.

If you receive a letter with a fake stamp I think you can refuse the fine but don’t then get the letter. Same as if someone hasn’t put enough stamps on something.
