Where should a language server log to?

Thinking it would be really useful if folks could share logs for reproducing tricky Gleam LSP bugs.

@alanz We already do this but I couldn't find a way to actually save the output from vscode. Do you just copy and paste it? Seems annoying and error prone for a large log

@alanz Folks will only know they need this retroactively, so anything that involves configuration before use isn't viable unfortunately.
