In today's test kitchen, I'm working on a highbrow jello shot. Champagne on one side, condensed milk and vodka on the other.

Learnings:

  • In this version the champagne layer has the most surface area touching the mold, but is also the weakest, causing tearing. Gonna flip that next time.

  • The densities are too different. Going to have to work on balance.

  • I hate the dappling caused by greasing the mold. Maybe I'll try beeswax next time.

  • People think condensed milk is weird.

@cameronmcefee cool idea! What does the champagne taste like flat?

I’ve had some success setting a carbonated g&t with gelatin. Requires a container that is under pressure, so moulds would be out unless you could somehow pressurise an external container.

@cameronmcefee Yeah, the quality of the mousse is hard to reproduce in a gel 😅 I did the same, dissolving the gelatin in a bit of tonic water and softly whisking it in.

If you have a sodastream or some way of carbonating a liquid, you can add a bit of extra carbonation to make it come through clearer.

By the way if you didn't know, "20/20" vision means that for each of your eyes you can see what you should be able to see 20 feet away, from 20 feet away. If you need to be 10 feet away to see something to see it the way someone with correct vision does at 20 feet, with both eyes, you have 10/10 vision.

The idea is simple enough; you extend the Seabike's pole to the appropriate length, then strap it to your waist with a belt. Then you find the pedals with your feet, and start turning the crank, with the waist strap to push against.
