Hey , looking to cook more at home in the new year. Hit me with your best, easy to make and fast recipes. Needs to appeal to a picky 12-year old and ideally to an even pickier 5-year old. Can’t use seafood, as my wife hates it.

@Tim_Eagon I hope my weekly cooking reports have been helpful! (or are they too long/complex?)

@Tim_Eagon Don't suppose you're familiar with southwest beef? Also works if you swap out the tex-mex seasonings for garlic and Italian seasoning (if you do, also replace any spicy peppers with bell peppers, and use mozzarella for any cheese topping).

PaddyHatchet,

@Tim_Eagon Paddy's Grandad's Australian Curry

500g sausages of choice (I use soy-based fake beef)
2 large potatoes, diced
1 large onion, diced
Oil
I cup sultanas
I 400g can of tomatoes
Three heaped tbsp Keen's curry powder
1 can Mountain Culture Moon Dust Stout

Fry potato and onion to golden brown, brown sausages. Add tomatoes, sultanas and curry. Simmer until sultanas turn back into grapes, adding water as necessary. Drink the stout.

@PaddyHatchet Drink the stout, love it!

    @dragoncrown My kids already eat that. I won't touch the stuff!

    @Tim_Eagon I love the Hairy Bikers’ enchiladas: https://www.hairybikers.com/recipes/view/enchiladas

    I’m pescatarian so swap out the beef mince for Quorn mince and also add in microwave Mexican-style rice to make it more like a burrito. If you do that it’s about 15 minutes in the pan and then 15-20 minutes in the oven.

    @Tim_Eagon I'm going to follow this thread because I have a picky 8 year old and I hate seafood. 🤣

    @Tim_Eagon it's not even remotely healthy, but garbage chicken is super easy and delicious, if you have a crock pot. https://thetakeout.com/gwen-s-garbage-chicken-deluxe-is-ugly-delicious-1825814466

    (I use cream of chicken soup instead of cream of mushroom, and add a can of water, which is not part of the recipe but trust me it's good.)

    @MrF I showed this one to my wife and she gave me the affirmative.

    @Tim_Eagon awesome! You can also add like green beans for a kick of veggie that doesn't ruin the meal.

    @MrF Good to know!

    @MrF I tried this recipe today. My wife and I liked it, but my daughter (who was home sick TBF) did not and my son refused to even consider eating it!

    @Tim_Eagon oh no! That's a shame! It's not pretty but it's so tasty! Did you add green beans or no?

    Edit: i see I did not mention green beans. We added them last time we made this and not only did it break up the unappetizing mushy brownness of the rest of it, but it's also nice texture of flavor.

    @MrF It is tasty and very filling, and I'm not even a fan of stuffing. I'll probably make it again when my in-laws visit; maybe I'll add green beans then.

    @Tim_Eagon ooh I know what to ask. Did you add the can of water I suggested, or no? We never had the bravery to skip the water, first time I made it felt like it would burn til I added the water.

    @Tim_Eagon@dice.camp avatar

    @MrF I went with cream of chicken soup and water. I actually couldn't find cream of mushroom at the store the day I bought the ingredients (they had the awful low sodium stuff...) and had similar thoughts about adding water. I think it would've been too dry without it.

    @Tim_Eagon yeah it just felt like it was turning crunchy.

    Let me know if you think of anything else to add. I feel like it needs something. Green beans definitely takes it most of the way there. Celery slices would probably work too.

    Ooh my wife had the idea to top with cranberry sauce, that's something too.

    @MrF I hate cranberry sauce (ironic, since I'm from Wisconsin). I think green beans would be the way to go.

    @Tim_Eagon Well, there’s this quick and easy flatbread recipe I’ve tried.

    @Tim_Eagon Marcella Hazan’s Tomato Sauce recipe:

    2 cups crushed tomatoes, fresh or canned
    5 tbl butter
    1 medium onion, peeled and halved
    Salt to taste

    Put everything into a saucepan with the onion halves cut side down. Simmer, uncovered, for 45 minutes. Stir occasionally. Discard onions when done.

    Best effort to taste ratio of any recipe I know.
