Just starting preparing lunch, I'm making my wee neighbour (and me of course) an omelette, mushrooms, spring onions and peas with some cheese and lots of pepper. It's the one time we can stop for a chat for a little while.
@skyfire747@NormanDunbar So easy to make, just a few mushrooms and a couple of spring onions in a small frying pan with frozen peas - they warm through while the mushrooms cook. I use the same pan to make the omelette with 3 eggs then tip the filling on half and some Davidstowe cheddar with parmesan on top once folded. 5 minute diabetic friendly lunch with no meat.

I'm lucky to have a friend who rescued a load of battery hens so get really fresh eggs when ever I need them, she also grows loads of veggies. My wee neighbour is a widower and I kind of look after him now and then so always go for healthy but light stuff like omelettes.
@suearcher@skyfire747@NormanDunbar Gouda and Parmesan on the ones earlier, it was going to be Davidstow Cheddar but hey, there was enough Gouda in the fridge so it went inside and the parmesan on top - don't need any salt that way.
I always keep a bag of cheese ready grated in the freezer, which makes using it massively easier
(I buy a big block and grate it all in one go, which gets a tedious job done in one lump. I just have to make sure I do it very soon after buying the block, or the amount left to actually grate dwindles dramatically...)
@suearcher@skyfire747@NormanDunbar The Kenwood I have has a few grating options, it'll grate a lump of cheese in seconds. I use it for Parmesan when I'm making lasagne.
@RosePuckey@suearcher@skyfire747 We get watched while we eat. Wesley won't touch any food, unless it's at floor level. He trained himself to do that! He knows he'll get a treat, so he's not pesty.
@NormanDunbar@suearcher@skyfire747 My lab was trained not to touch food until I said take it. He was a rather good working dog too though. They all give you the look though.
@suearcher@NormanDunbar@skyfire747 They have a look, it's an I'm starving and nobody loves me, or walks me or gives me cuddles so please share that food with me sort of look and no one is completely immune to it.
