I installed the latest version of #Thunderbird today after a long time, and it's really great. However, I personally miss important features like a 'from-full-address' column or the implementation of the ManageSieve protocol.

tl;dr: on today's Internet, why would you want to tell other people what mail client you use, and by implication what platform? Strip this out in your mail submission server, and if you can set your mail clients to do it regardless of your mail submission server.
(I don't know how you do this in common mail clients, like Thunderbird.)
For users of mutt[1], you can just put "set user_agent=no" in your .muttrc file ... except the default is already "no", so you're set unless you've previously turned it on. 😜
