Spaghetti Carbonara

I had originally posted this in the microblog section but I have since learned to make articles so reposting. Plus it somehow got set to 18+ and I can't figure out how to undo that.

My favorite spaghetti carbonara recipe.

2 eggs plus 2 yolks at room temperature

1 pound bacon

1 large onion, chopped

2 cloves of garlic

I bag frozen peas

1 cup grated parmesan

1 cup parsley, chopped

Salt

Pepper

1 pound spaghetti

Cook bacon and set aside. Set aside half the grease for later. Saute the onion and garlic till onion is clear, remove from heat. Start the water for the spaghetti. Add salt to the water.
While waiting for the water to boil lightly whisk the eggs. Add 2/3 cup of parmesan and mix together.
Cook the spaghetti.
Return the onions and garlic to a low heat. Add 1/2 a bag of peas and stir till thawed. Crumble the bacon into the mixture.
Drain spaghetti and return to hot pot. Add 1-2 tablespoons of bacon grease to the spaghetti.

Now the fun part. Start stirring the spaghetti while adding the egg mixture. Mix fast to avoid making scrambled eggs. Add the onion mixture and continue to stir. Stir in the parsley. Pepper to taste.
Serve warm with french bread.

@Pookie1804 Thanks for posting this recipe! Carbonara is a family favorite. I make mine a bit differently (for example I use pancetta rather than bacon and olive oil in place of the bacon fat). I'm going to try your version next weekend.
