When is an app icon ever reduced to only a silhouette?
I agree that the white circle backgrounds aren't attractive but they do visually convey the touch target area and ensure there's sufficient color contrast around the icons.
Not everyone has those concerns and being able to alter them is good but they seem like good defaults.
