My vegan daughter (as opposed to my non-vegan daughter) came over and we attempted to alter my cookie recipe to make vegan cookies. We used olive oil instead of butter (which I do anyway) and a “flax egg” and while they don’t look beautiful the taste is excellent!
(The one caveat is that they needed to fully cool. Fresh from the oven is not the right time to eat them.)
