From what I remember, it was originally something that impoverished people did as the only way they could get coffee. It’s culinary gentrification, like lobster and even caviar. For the rich, everything is mainly a status symbol, even food and drink.
Why would they do that when coffee trees literally grow where the chivets live? They can just pick the berries themselves instead of waiting for the chivets to shit.
I’d really like to meet whoever it was that first convinced some gullible rich idiot that poop coffee was a delicacy worth paying thought the nose for. That person could sell anything.
