The Child (working on trying new foods because…a child) requested “Eggplant Parmesan Thursday”

OH MY GOD THAT IS SO MUCH MORE WORK THAN I THOUGHT.

If he turns up his nose at this I might cry.

@Catvalente during the pandemic for my wife’s birthday we had a zoom cooking class with Dan Pelosi to learn to cook eggplant Parmesan. Which was more complex than I had realized but was also really amazingly tasty.

Anyway here’s his recipe which I can endorse as being very tasty and doable for a home chef (though it did help that my wife and I worked together to make it)

@Rycaut @Catvalente Seems as if you would use up a LOT of olive oil with this recipe...

@fishidwardrobe @Catvalente yes this is not a diet recipe… but also you don’t need a ton of oil (I think the recipe says 1/4 inch - it’s fairly shallow frying not deep frying and while it takes a while you can use a smaller skillet and just fry in batches.

But yes you need to have a plan to discard the oil when done with this.

(One of the many reasons this hasn’t become a regular staple dish though we would gladly make it again for a special occasion)
