I can only say what I know.

often times they are up-cycled .

Meaning there’s a market for vintage arcade.
Mostly it’s the outside that’s damaged, but if it’s the internals it’s parted out and sold to a collector or someone who has a family dream of ABC game.

Some have externals no cabinet that’s useable.

Then there’s people who have hobbies at finding faults in logic systems and fixing or replacing a problem part etc.

Then there’s just recycling electronic components etc.
